Well the standard engine is the 3116/3126/C7 but the later “civilianized” trucks had Cummins 6.7 so any of those should work.
But honestly you lost me at “I have a good choice of engines for cheap”😂
We had CUCV in our Air Force base at Florrennes BE in the mid 80s. I own one because of that. Would love to see Air Force markings from that group (485th TMW)

It works well IF you have access. It’s a big tool and I couldn’t get to quite a few. I just used a small 3” cutting wheel to score them lengthwise. Then they come out pretty easy with a wrench and impact
