The fuel gauge staying on full a long time is a product of the way GM made the system back then. 3/4 tank is normally around actually 1/2 tank or less fuel in the tank.
I forget which way GM did theirs, but Ford did it the opposite way and their gauges at the time would drop to around 1/4 tank...
Does your new starter have the starter support bracket for that starter? If not, don’t start it again until you do.

Are you talking about the solenoid that pushes against the throttle arm? If so, they are very hard to find and extremely expensive if you do find one.
Peel back the rubber boot on the end with the screw head on it. You will see two really thin copper wires running from the plug to the coil...
