I did an entire 939series truck using the smallest harbor freight pistol type sandblaster.
I started with the idea that i was going to touch up the front bumper, and before I knew it i was finishing up the rear bumperettes a couple weeks later....

I'm not really concerned with much beyond getting something for the belt to ride. My use case for the wrecker means it's almost always at 1600rpm anyway, and it can even stay plugged in when parked.

As to the water tanks causing trucks to flip, it isn't so much the weight as it is the slosh. A half full unbaffled tank is far more dangerous than a full one.
Using a 5ton doesn't really resolve this.
