How to adjust the temperature of a shutterstat M939A2

I rebuilt my shutterstat and now my fan comes on at around 160. Does anyone have a rough idea of how many degrees you gain per turn/thread and what direction I need to go with the probe?

If not I'll get out my hot pad and pot of water and start playing then report back.

I think maybe Swampdonkey has experience with these?
