You can wipe them off to inspect the condition of the rollers and the cage and feel for looseness with out washing. If the grease is that hard, old that you can't see the rollers or feel for play than maybe you do need to wash it out.
I also wipe old grease out of the hub and wipe new grease in. More than one way to skin a cat for sure. Some of the schools Ive been to said do not wash. 30 years of packing and inpspecting truck and trailer bearings havent had one fail yet.. [knocking on wood] LOL
