Again all gear pumps make noise, that is why you will not find one from "an old GMC truck",, 99% of civy vehicles use a vane type pump because they are much quieter.
I'm sure you could fit a vane style pump from an earlier HMMWV with the built in reservoir but why? gear pumps are more dependable...

All the trucks with the remote reservoir have gear type pumps, all gear type pumps make noise, that is why you don't see them on civy vehicles, think log splitter, skid loader or trackhoe. all of them have pump noise, changing the fluid will not change that.

This seems to be a common "issue" not really a problem, someone should crank up their CNC machine and knock out some 1/4" spacers for the master cylinder as I don't think there is any adjustment available, may even be some spacers out there in the hot rod world, I have never looked.

Park is safer and the trans does not know the difference, any reference to neutral hearkens back to the trucks with no park.
run it it forward, reverse then put it in park and check the fluid while idling.
You can ohm out the wire to see if it is open or not, you can also ground the sensor connection on the gauge, shorted to ground it will read full scale to one side and open will read full scale the other direction, this is true of all analog gauges, some will read max shorted others when open...
