Just go to tractor supply and read the label. The blue bottle is standard motor oil. Red label is non-detergent. The 40wt is usually only sold in 2 gallon jugs not quarts.

Gl-1 is only suggested because of the fear that the sulfur additives in some gear oils will corrode the bronze synchro's in the transmission and transfer case. In all reality gl-1 is a primitive and inferior gear oil. Motor oil is a common lubricant in manual transmissions.

75w90 is fine for the axles. I am unsure of what to put in the winch. I have heard people mention using corn head grease in the winch but that was in circumstances where their winch was leaking.
Acceptable yes....optimal.....no. Gl-5 is much better for the axles since it has the high pressure additives the rockwells need. The axles do not have yellow metals at risk of being corroded. Your transmission and transfer case however do have synchros that can corrode. Gl-1 or non detergent...
