Just make sure your fluid is topped of and give it a little time, it sometimes takes awhile to get all the entrained air out of the fluid.
Does it change when you steer the truck?
Before going through all the trouble make sure it is the Cadillac valve, the "noise" will change between the fan running and not, you can simply unplug the wires from the valve to activate the fan, if the noise stays the same it is not the valve.
He has a serpentine belt, I have never heard one of those slipping but I guess anything is possible after cooking in the California desert for decades!!

The "civy" pump (metric Saginaw P series) is the same the only difference is the pressure relief valve, I used a rebuilt (Cardone) one for 3 years on the Detroit before going to the remote type when re-powered with the GEP turbo.

I am just curious how the "bad pump" charges the accumulator to begin with? pumps generally make pressure/flow or they don't. also how does the pump know when he gets to the same point in the steering every time so it knows to quit?
Curious does the steering act the same in both directions? how about the brakes.

The PS pump has three lines in play one HP and two returns, if both of those return lines are going to the pump then there should be a reservoir cap between the alt and lower pulley, if it had the remote type pump there would only be two connections on the pump itself so both those return lines...
Where are those two hoses going that are behind the Cadillac valve? those should be going to the reservoir.
