CUCV cuts off

For the last few times, when I start the CUCV after it sits for a few weeks (it
is not a daily driver), it will start right up, but after about 30 seconds, the
rpm will go up a little and then the engine will cut off. Restarting it will
take maybe 5 to 10 seconds of starter work, and then it will run fine. If I
start it weekly, there is no problem.

Any ideas?

Sounds like an airleak as said before or you may have the old style(fuel)lift pump. The newer style has a check valve that won't allow fuel to drain back. Same for the older IP's, there is an article in the TM section that explains it.
