Slow speed and idel it will stay around 180 or less. Road speed of 50-55 temp climes to 200-210. Any ideas. Have not roded the rad yet but looks like the water is cerulating good.

Check your belts...
Coolant percentages good? Over 50/50 will cause over heating problems due to boiling / cavitation.
When hot check the radiator for cool spots across the front core (poor circulation) water flows in the tank well reguardless...
Do a flush... I used a gallon of CLR calcium lime rust remover or equivalent, let run for 30-40 mins and flush for about the same time.
Verify your temp with a IR or manual gauge... Could be a sending unit or gauge malfunction... or...
Yank it...
