Up to running temp time?

The temp to day here is rainy and around 50. I took the truck for a ride and
she takes a about 15mins to get up to around 190ish. My truck likes to run around that 185ish the whole time I was cruising around the back roads for about 30mins today... is that normal on a cooler day? The truck in 85 degree weather takes about the same time to get to 195 then runs the normal 195 gets up to 215 then fan kicks on and then 195 I know that's the normal operation but the cold wearther I'm questioning.

Mine usually takes a bit longer to get up to temp when it's cold but it will still get up to normal temp. The cooling fan will cycle as normal, just far less frequently.

Maybe you've got a thermostat stuck open?

How common is that? When it's in the 70's or eighties it functions perfectly normal...
No idea how common on these but I know thermostats can get stuck open or closed. If stuck closed you'll get overheating. If stuck open, on most gasoline vehicles you wouldn't really notice except for taking a little longer to get heat in the winter but, on diesels which can struggle to get up to temp in cold weather even when working properly (I'm sure you've seen trucks running around CO with cardboard on the grille), overly cool engine temps could be a symptom. Stuck open in warmer weather it would cool normally and probably wouldn't have any issue getting up to temp.
