So what I need some ideas on what to make the inside like. I want to be able to have everything needed for a weekend camping like atv's in the back, Jon boat underneath between duals and landing gear, boxes under one side, bedroom upfront.

I feel like it would be a good idea to leave it. Not only would it help make cooling the trailer easier, still air also serves as a natural insulator. close up the vents when it gets cold and the trailers interior is insulated from the cold air outside. Feel free to disregard my suggestion, as it stems from basic high school physics and 2 minutes of googling

Since the trailer seems to be insulated enough, go for it. The benefits do not seem outweigh the negatives. Whatever makes the trailer work best for you is what must be done
