I'm not sure if the idle is a problem or not. If the RPM's were changing without you touching the gas pedal, it seems kind of extreme. I'd be worried about your temperature being pegged high @ 240, as well as your air pressure. I believe the TM says normal air pressure is 105 psig, and normal temperature is 185 deg F.

Hopefully someone with more experience will chime in.

I may not know much and the fact that your flip flops are shown away from the pedals but your left hand is not filmed makes me think this. You're pulling the throttle cable on the dash. I've never heard of a multi jumping from idle to 1500 3 times in a row in less than 5 seconds unless it had some throttle movement. It sounded good at it's regular idle. When a multi has a leak south of the pump, it usually just leaks and the in tank takes care of the rest. If it has a leak and a bad in tank pump, it usually won't run. If is has a leak on the return up around the hard plastic lines at the injectors, it'll run. It will stall a few times till it gets the fuel in the lines but it'll run fine once it self purges. Just my experience, I might learn something on this thread. OD Iron, the temp gauge will peg if the wire feeding it shorts out. It's fed 24 volts on the positive side, the resistance to ground comes from the temp sensor. If that wire shorts to ground, it'll peg as soon as the ignition switch is turned on.

Sorry that part was me playing with the throttle a couple of times. The fluctuation I'm talking about was less than 100rpm seen in the rest of the video.

The temp gauge wire is severed at the sender. Something I haven't got around to fixing yet. The oil pressure gauge I believe is a 60psi gauge with a 120spi sender. I have the 120 gauge, but haven't installed it yet.

The air pressure was right at the 100 mark.
