One big problem you will have with a bobbed deuce is that you have removed one axle and effectively reduced the braking capacity by 33%. A good lawyer will argue that the GVW has been reduced by 33% due to the reduced braking capacity.

Personally I am against bobbing a duece using either front springs, trailer springs or a trailer sub frame. All of these methods will significantly reduce the load capacity of the rear axle and truck.

You need the fixed version of the hitch. If you run air to air they can bind up due to too much force. This is a real problem with an unloaded dolly or empty trailer, it kind of acts like a dry fifth wheel.
