But that IS one of your best options if you want to run singled 11.00's on a deuce. The canadian wheel/tire packages were priced pretty well too, last time I looked.
That looks pretty sketchy to me. Those type of trailer hitches get most of their strength from being bolted/welded to the trailer tongue, but the way somebody modified your trailer, it's that top edge that's taking all the load. Not ideal. Would gain a lot of strength if you just welded some...
There's just not much strength in the center of a piece of solid bar, and small diameter bars are not especially strong in compression (compared to larger diameter tubing). Also would avoid drilling/bolting to the top/bottom of the framerails if at all possible (I don't think that's even legal...
But that's not to say you CAN'T do it. My Grandpa put a HUGE old Cat engine in a Suburban. Forget what it was exactly, but it was stupid. He finished it, but ended up parting it out because he couldn't find a rear-end with a high enough gear ratio to make it drivable.
I would also suggest just transplanting whatever body you want onto a deuce chassis. Would be a LOT easier and you'd end up with a nicer rig in the end.
I wouldn't use any kind of angle grinder or abrasive wheel on those parts if I could avoid it. Would be almost impossible to get a nice finish, and aside from looking like crap, all those grinder marks (nicks & gouges) would create stress-risers in the metal. Just wouldn't want to do anything to...
Your wheels are too wide. Wheel choices are pretty limited if you want to run 11.00 singles. You can use stock wheels, modified stock wheels, canadian wheels, or have custom wheels made. Think that's about it, and there are advantages / drawbacks to each of those options.
