Check your battery voltage without the engine running. It could be below the low battery voltage cut off set point on the fridge. With the engine running it is likely getting a voltage that is high enough to allow it to start the compressor.

Are you talking the rear shocks? If so, they have some notes (well the old site did) that the 1 ton trucks use a 9/16" bolt where the shocks use 1/2". You either remove the shock sleeve or weld a 1/2" ID washer to each side of the mount and use a 1/2" bolt.
