You might want to confirm if the manual fuel shut off was pulled and is now not fully open. It needs to be all the way towards the firewall. If not fully to the rear, or if the internal o-ring is bad, you could get the same symptom.

Looking for someone familiar with the AV-1790 ignition system. Our engine starts on the booster coils fine, but dies once the boosters are turned off. Is this caused by a problem with the magnetos?

Yes, air-cooled Continental. 1790 CI fed by two massive Stromberg 2 barrel carbs. Each cylinder is dual plugged powered by 4 magnetos.
