You forgot that with dual's you have better sway control on corners and curves. Especially when loaded.
If there was no good reason for dual's then every "over the road truck" would have singles.

I saw something on the second video. It looks like your right front tire was not turning properly. Like it was jerking. You could have a bad axle shaft joint in there. You need to jack up your truck and spin the tires by hand and feel for anything grabbing/jerking .

Don't worry. You adjust the rockers with the set screw anyway (mechanical lifters) so you will not have valves hitting the pistons. The only problem with shaving the heads to far is manifold alignment. Since this is a straight six cylinder and not a V-8 engine there's no problem here.
