Painting is the easiest part of it. Trust me! As far as parts go, there are a LOT of vendors and people with parts available for pretty much whatever you need!
The trucks are definitely out there and in just about any shape. It really depends on your budget and how far you're willing to travel.
I saw this truck in Seguin, TX the other day for 4k.
And there are FAR more knowledgeable people here than me.. my knowledge is a drop in the bucket...
Welcome to the site! Quick question about your air starter.... these trucks do not retain air worth a flip... how do you intend on having enough air pressure to roll your starter over after a few days of sitting?
