Maybe you should consider on running dual alternators. The converter would be fine to run all of your equipment but its possible that your alternator will not charge your batteries back up enough. Especially if they are not gel cell batteries...

It might be a little costly but I run Slime in my tires for a little insurance and a peace of mind. I still check my tires on trips over 75 miles and I visually look at them for local runs. I haven't added air to them in 6 months, other then when I do some offroading. They still hold at 50psi.

If times get really rough and you don't have a spare vehicle to get you around. You can always jump the 2 terminals on your starter silonoid to get it running. Providing the starter is good still.
Check all of the battery cables to make sure they are tight and clean. Follow them to make sure there isn't any cuts in them. Where corrosion decayed the cables in the center of them.
Or you can try to take apart your 3 lever switch and clean the internals. People use dielectric grease on their contacts but I found that using dollar store petroleum jelly works the same
