Well I know there are BBQ mobiles outthere but those are mostly little 2wd rice burners with smokers set up kinda like utility bodies

now comes a burning question how to make hot water in a small space

Waste heat recovery system. That way you're heating your water while you drive to the picnic.

That's like asking how an engine works. The answer is: It depends on how you design it.

I'm not an engineer, but I think one way would be to put a water jacket around a section of the exhaust. Steve Chastain has a good discussion of waste heat recovery in his Generators book.
