I'd start by checking the temperature with an IR gun. They are inexpensive and handy a heck.

If you read the block temp and the radiator temp, you can determine actually temp and if the Tstat is stuck.

I've seen several gauges that read differently/incorrectly.

I also use mine to check hub and brake temps, a lot.

It's a diesel, 180-200 is in the normal range. Is the coolant a 50-50 mix and in good shape? Are there any 'hot spots' on the block, is it loosing coolant? If not, it's probably normal.

ok thank you. i also have the intake heater leaking fuel on my turbo. it leaking at the end of the valve where the snap-ring is. i took it valve off the truck and took the snap ring out but i cant get it to come apart. any tips?

There are several threads on the leaking nozzle. Just search for fuel manifold heater nozzle leak. Mine leaked. I replaced it but the new one got fuel in my crankcase. I just unhokked the fuel lines and capped/plugged everything. I just give it a 1/2 second shot of starting fluid in the mushroom to get her going.

Good suggestions her already but I will add my 2 cents worth also. I had this problem and spot tested the block temps while running in the 200 degree range, it seemed higher than normal to me? It was as hot as the temp gauge said it was, I then replaced the thermostat and that wade no difference the old one seemed to be fine. I then took the truck in to our local CAT dealer and had him do a complete cooling system flush, it cost me about 300 bucks but that brought the engine temps back in range of the thermostat and all has been well since!
