The 2 low air pressure switches on the air tanks were leaking air so I replaced them and now the water separator under the dash won’t stop blowing air while I’m driving. It Stops leaking around 100 psi. Is there an adjustment I can make?

I think you are talking about the white plastic moisture separator for the CTIS system? It may have a self drain mechanism in it like most, a simple float. See if you can disassemble and clean it, that is typically all they need, at least in building compressed air systems. I have never had mine apart, so don't take this as gospel.
