Usually a bad carrier bearing will have the rubber shredded or the bearing itself falling apart, or an obvious separation between the rubber and the bearing.

Grounding kit is to supplement the original system. If it "fixed" your issues, that would just mean you need to go through and clean up your original grounds.
Always better to have plates, but I know of people with 5 ton trucks and deuces that have never put the plates on and never had any issues.

checking for noises while moving is definitely a 2 man job. Things like carrier bearing are easy stationary checks, but some things just don't show up when stationary.
