Try greasing the rear driveshaft slipjoint splines and ensuring the joint is not bottoming out. This is not a CUCV specific issue and typically occurs during acceleration and deceleration.

Since you ask, Unimogs are rated to 100% grade, 45 degree. Traction is the limiting factor. It's easy to find a place to climb up and down OVER 100% in the Utah slickrock. We do it all the time.
Approach and departure angle have little to do with what grade a vehicle will 'operate' on...
I'm a Unimog nut but think you are on the right track to modify the CHEAP 5 tons. Sure, Unimogs are available up to 24,000 lbs GVW (on just two axles, and that's the offroad rating). But, such a 2450 Unimog truck could cost you ten times the initial price for a 5 ton.

Not radial tires? Bias ply tires are really bad about taking a set when sitting, cold, and will take miles to warm and get round again. A steering system with a little play is easily set into death wobble. Getting worse in cold weather kinda points to tire issues, IMHO.
