You seem to have a good step-by-step mindset already.
You can put a pressure gauge into the plugged port where the fuel lines comes up on top of the tank. With the in-tank pump running, you should see 5-7 psi there.

Just a tip on leaks involving plastic lines - whoever wrenched on the truck may or may not have put the "trumpet" looking brass inserts into the ends of the plastic lines where they go into the compression fittings. If you spot a leak, for example on a fuel supply or return line, be careful just...
First thing that comes to mind is the hydraulic head having difficulty reaching injector opening pressure when hot.
Methinks it could be a wear consequence of running waste oil.

I am not advocating to go overboard for what might be a simple problem. If you happen to be draining a lot of coolant in the process of doing thermostat and water pump, it might be good to flush the whole cooling system. Crud, rust and stuff are likely to accumulate over time, reducing cooling...
