Very likely you will not get fuel gelling at 11* F while trying to start it cold. Your more likely to experience the gelling issue around 0*F or lower when your burning uncut fuel.
Try to hot wire the brake light switch before you purchase a new one. Could be just a"bad new switch". How did you get the LED tail lights to work with the flasher? Maybe that could be your issue?

Not uncommon for the glow plugs to fail in rapid succession. If one goes down the power will increase to the others and burn them out as well. Its known as "The cascade effect"

As far as your wires are concerned, the sensor acts as a switch. 12 volt in one side and when cold it stays energised "normally closed circuit". As the engine warms up it opens the circuit/switch preventing 12 volt power...
Does it puff any smoke when it skips or surges? It sounds fuel related. Bad/sticky injector? Bad injection pump? Other than the surging the engine sounds strong and I would lean towards a bad/sticky injector.
