When was the last time you changed the fuel filter / filters? There is variation in how many that a given truck has, but if one is plugging, it can cause all sorts of low power related issues.

Agreed but from recent experience helping repair a truck that had this happen (debris plugging the glad hand vent), the fronts were grabbing much harder than the rears, enough to damage the wheel bearings on both sides. I could see how someone could think it was only the fronts that had an issue...

Indiana here, not Arizona, so things may differ, but my camper conversion is insured as an RV by State Farm. Had to give a few pictures showing that it was indeed modified to be an RV, but no hassles beyond that.
I don't know if NC and IN branches of State Farm have the same options available to them, but my agent wrote my deuce as a 'commercial vehicle used for non commercial purposes'. The cost is reasonable compared to other policies I have. You might try mentioning that phrase to your insurance agent...
