The truck is looking nice! Instead of a fuel can on the drivers step you should look into an extra tank where the spare tire goes. It would seriously extend your range and let you carry an extra 5gal of water instead.

I would keep it very simple on the EUC. The more you put the longer it will take. Your first one will take longer than you expect. If you want you might call GL and talk with them after you win and recieve the notice but before you send it in. If they need revisions it can add weeks to the wait.

Make sure you get a clear title! You will have problems if you buy from a private party and use a sf97 or government title transfer. If there is no title you can't get one in Texas on a military vehicle unless you are the one that buys it from the Government and you have a sf97 in your name.
