If you are going to tear that far into it go ahead and change the radiator and heater hoses...if finances permit. Maybe even the water pump, I would. Cheap peace of mind.
It does sound like you unstuck something.
Thermo at 195 sounds good.
Thermostat might not be opening all the way, just partial. If it was not opening you would not get 2-3 miles before the engine would overheat at any speed.
You might also want to check or just replace the heater hoses, one may have collapsed.

Uh, unless you are going to use the truck offroad only, I would NOT hook it up to the headlight switch. Your local 'lets lockem up gang' would have issues in having all that light coming from the front of your vehicle. Remember you have to dim your lights for approaching vehicles...

Most of the ones I have seen are red, saw several black ones though. Was it a new dash and someone too lazy to dye it red?

The reason for the CUCV doing only 55, gearing. Fronts and rears are 4.56 with a trasmission with no overdrive, TH400. All of the drivetrain is very HD.
You can go faster by swapping out to a OD tranny or increasing the tire diameter.
