I ended up with an AutoMeter gauge and I used a $12 AutoMeter pod to mount it to the steering column with a hose clamp like this:

I think you'll be fine with only one kit. Just install the largest filter possible. For the bypass side that's 10 inches long and 4 1/4 in diameter. For the full flow side it's almost 7 inches tall and 3 1/2 in diameter. The system will certainly filter better than the stock 40-plus year old design.

Yep it is a good idea. It seems not many people here grasp the concept. It is very common for 18-wheelers to run a bypass filter system. It just doesn't make sense to be changing out oil every 3-5k in a truck like that. It would be very expensive considering they would have to do it twice a week...

Check the toe-in. Too much will make it look like the the axle has too much camber. Shoot for 1/4-3/8 inch toe-in at the tires. Check it at the axle centerline on the front and backsides to get this measurment.
