What about a K Jetronic? All mechanical, easy to tune, cheap, and you can keep the original carb body as the throttle plate. all it takes is an adaption for the air plate and drilling the manifold for the injectors. No sensors, no feedback, no electrical, except high-pressure pump.

You should be just fine. It has been discussed that a little DOT3 in the system will help keep the moisture from puddling and will keep the seals soft and full size.

I think the part that you are referring to is simply a poor representation of the fork engagement grove in the dog clutch.
In order to address the issue, I see no problem in placing a filler shim behind the dog clutch to prevent overshooting the disengaged position.
