I also packed mine full of GAA when I repacked the bearing changed the knuckle bushings and replaced the wheel cylinders. I figure if nothing else it will provide at least a little protection from dirt and water if one of the boots tear and I don't notice it right away. 2cents
Man, doesn't sound like you can catch a break. One thing I didn't see answered was if you found a source for new rod bolts or did you reuse the originals. Sorry if I missed it but I just read from page one and didn't see an answer. Hope the repair works.

I would go for truck 2 myself. I would have more use for the cargo cover compared to a hole in the roof. I also can tackle any mechanical repair but have no experience or tools for rust repair. The indicated miles are a big question on any of these trucks because many odometers have been changed...

I don't see why it wouldn't work. I would think the gas assist cylinders for a hatch back car would have a long enough stroke when used with the proper mounting system. Jake0147 has a good point that the mounting points would need the proper reinforcement to keep the hood or firewall from cracking.
I would agree a postmortem is in order. Would be interesting to know what caused the failure. Rod, rod bolt, piston or did the end of the injector fail. Inquiring minds want to know. Also was that the original manufacture date or a rebuilt tag ?
