I used 4 gallons of Gillespie #24087 when I painted mine back in 05'. Did it pretty much like you are describing, I left the cab on the frame and removed the fenders, hood, cargo box. I was using a nice high volume/ low pressure paint system.
To convert from 24v to 12v you just simply replace the 24v bulbs with 12v bulbs. It's just that simple.

I believe you are seeing the original yellow primer wearing through in spots. Here is what it looked like on my 67' M725 as I was sanding it down. Lusterless Forest, then OD 24087, then yellow primer, and finally bare metal.
