There's also a sensitivity adjustment pot inside the unit. I adjusted mine a little to get it to be reliable. It's been a couple years, but as I remember, with the power on, I turned it until it just screeched, and then a little farther. Hearing protection required!
If you want to use a penny, it'll have to be an old one, since they've been copper plated zinc since 1982. Even then it won't be pure copper than can be annealed to a full soft state the way gaskets need to be.
My 003A starts the industrial 5hp 1750 RPM motor on my air compressor, but you can tell it's working at it. I'd expect the 004A to be able to start half again more, at least.
Consider getting variable frequency drives (VFDs) for your 3-phase equipment. I got one for my milling machine years...

Yes, but all diodes have positive anodes and negative cathodes by definition. The thing you want to be sure of is which three have the stud as the cathode and which have the stud as the anode, since there are three of each in the assembly.
Plugging the part numbers into octopart.com shows several suppliers of small quantities. You may not be able to get both from the same supplier at the moment, I didn't check that thoroughly.
Alternatively, you can probably find diodes with similar or higher ratings with the same packages...
