You may wish to dis-assemble the turn signal switch and check the contacts, to be sure they are not bunt or corroded. While you have it apart, use a good contact cleaner to remove the crud.

The holes help the foam to drain if it gets wet. When I rebuilt my springer driver's seat, I had to replace the plywood and it seems the 1/2" holes were spaced about on about 4" centers. When you make your new seat board, shoot it with some clear laquer (or paint), to protect it from the elements.

Why don't you troubleshoot the existing gauges and find a EGT (Pyro) and Boost gauge to match that, instead of replacing all the gauges? There are threads on changing lamps on the instrument panel to increase night time visibility. I found an EGT and Boost that come fairly close to the OEM...
