It all depends on how far you turn the fuel screw. In stock form you don't have to worry about the EGT much but I wouldn't touch the fuel setting without a pyro.

I've done a fair amount of logging so I kind of know what you're up against.
If I were in you're shoes what I'd do is buy two trucks. One with a loader mounted and the other to haul the logs. The outfit you're trying to build is going to be too heavy and too big to meet you're requirements...
If it's knocking I wouldn't run it a bit more untill I pulled the pan and found out what is loose. These engines have been known to put a hole in the block when something lets loose.

All joking aside, The best place for the probe is right before it goes into the turbo. 1300deg is the absolute max as far as temps go but I wouldn't want to stay there long.

Tom, A fellow member hooked me up with this for running a 12v gauge on 24v +12V Fixed-Voltage Regulator 7812 - RadioShack.com .
While I haven't installed it yet it should work. It will take 24v in and put out a constant 12v for any loads less than 1amp.
These two comments don't go together. While I don't know anything about otters I do know that AL doesn't rust. It can still corrode though.
AL is just as easy to patch a steel. It just takes a little different equipment. A TIG machine or a MIG with a spoolgun should work.
No, the winch won't try to rotate. It will pull in a straight line from where cable exits the drum to where the anchor is attached so you need to have the anchor point in line with the cable. That will keep the winch from trying to roll when winching.
