Sounds like a fun trip. The accuracy of your gauges is easy to check. Just check it with an infrared thermometer. Grounding with the gauges is critical. All of my gauges work spot on. People that have gauges that don't work correctly probably have not done the proper troubleshooting to fix them...
I think if you pull that plug out and had the engine running, you would be draining your oil out too as it the oil pressure line would keep pumping oil to the injection pump.
Overkill is the name of the game around here. But if you could take them off and trade them for a set of complete warning lights, that would be good. Might be a Win/Win if that is what the OP is looking for.

I have never been stopped in my Deuce. I just keep my nose clean and have not had a problem (knock on wood). I have a copy of the law with my license plate in the glove box. I agree, politeness helps a lot! Pick your battles. haha.
