Just buy an appropirately sized canvas tarp. Many of the surplus dealers have a pretty good selection of the old OD canvas tarps that could be tied to the bows in short order. Here's a 10' x 12' tarp that should work well...

I wonder what the Grove and Palfinger cranes weigh though. It's hard to tell by eye, but they seem to be a bit heavier than the average knuckle boom. Also, as Gimpy mentioned, Spicergear put a Grove behind the cab of his Deuce. As I recall he had to do a lot of modifications to the outrigger...
