I know it would only be a manual way of shutting of the air, but would be easier than pulling the mushroom off and running around looking for something to block the air intake

i'm 99% sure that i saw this truck for sale on milweb a few years ago, it was listed as a low milage truck due to it being an ex water truck so this may explain the hubs, when i saw the ad it had got the cargo body on it but this may have been added after release .
truck does look good...
sorry but this 5 ton was not for sale, if it had been i would have been interested, unfortunatly we don't have G.L prices over this side of the pond and good M series trucks are quite hard to find in good condition, M35's and M54's often are advertised for between £6k - £10k
