You will do fine with a full size like an F250.
Not sure I would suggest the Canyon.... but taking it slow an easy for a short distance (like 15 miles) I am sure its 'possible'.
Either way, the height you are looking for shouldnt matter.

What would your intended tow vehicle be? I have towed my 1009 with my deuce... just fine. I have towed civvy blazers with civvy pickups... just fine.
Towing a 1009 via towbar, I wouldnt worry too much about it.
Bypassing the switch is quite simple. You need a jumper to plug in, in place of the right switch, to effectively make the same connection it does when its in the UP position.
Now... IF done right... you could actually use those switches, and the bulk of the wiring, to provide your 'new' lights...

I am not sure what fuse boxes you are talking about? Are these ones you are adding?

Oddly enough... I got mine to pass once by mounting the plate light with one of the plate screws... and plugging it in via the trailer plug!
Its not on there anymore though, I found a different inspection station. (that reminds me... I better have it done next week!! been out since JUNE!)
The way he described it... he was putting it under the nut with the red wire. Hence my comment.
Its interesting, i studied the schematics today... there is no indication of the gen1 light wire connecting to the heater circuit (has been referenced a few times, and is this way in civvy's)

If your 6.5 is starting faster than your 6.2.... get better glow plugs :-)
My 1009 starts much easier than my wife's burb... they both have new plugs in them. I run the wellmans in both, 070 for the 1009, and 050 for the Burb.
The wellman plugs heat much faster than the 60g's, which helps...
