EUC clearance time seems to change more rapidly than the weather. I think your Christmas expectation is fair but don't be surprised if you have it by Thanksgiving.
I'm a pretty staunch advocate for the 700R4 in most cases. It can certainly be built to handle anything the truck can dish out but as Cliffy pointed out, OD would be all but useless with the 43" tires you have!

I just went to the -20 and -34 parts manuals. There is no pintle listed for the M1031 in any of them. Since the M1031 is a chassis/cab, the company that completed the vehicle installed whatever was specified in their contract. I don't have the TM for the SECM but I'd wager that there is pintle...

The 16.5x8.25 rims on it are quite a find these days. Save a few pennies and later put on the radial tires, they are quite an improvement. All in all you seem to have a solid truck to work with.
