Cool. Now you have time to research the various manufacturers of these gauges and find a more reliable one. I searched on gauge temperature range (100 - 240F), ohm range, and 24 volts.
That's what I get: 4 PAOZZ PAOZZ PAOZZ 05624 88-21061 .. TRANSDUCER,MOTIONAL. Search for the part number in same document and you get an NSN number.

When confronted with this sort of a question I call a qualified Electrician. He will know what is up to NEC standards and can keep everyone safe and secure during an outage. But that is me: I know I have a lot to learn about power generation.
You will need the various TMs available for your machine. While searching for the NSN of the sender I found a testing procedure in TM 9-6115-642-24:

Check wire connections from sender. Also, make sure gauge is not 'too tight' in the panel. I've read that if you tighten them too much they can hang up....connection screws, mounting bracket, all of them: snug, not tight. I believe the gauge measures resistance of the sender. Ohms...

In an 803A you will have 2 conductors hot, a neutral, and a ground.....for single phase, 240 volt service.

I believe you are correct. However, if you ever get 'Alaska Electric Power' to your processing facility you would need to open the ground to neutral bond. As you describe.... your generator is the source of all electrical power, drop a ground rod (proper installation - check NEC... 8 or 10...
