Pretty sure that the old SW gauges will work. They use two coils to compensate for variations in the supply voltage, the new plastic (Faria) gauges use a Zener diode to regulate the voltage and need at least 15 volts to work. The sending units in this case...
Go for zero tolerance.

Switching batteries and/or alternator off and on may create regulator failure under the "right" circumstances.
The alternator is always "on" after the accessory switch has been turned on and can be turned off with the engine running using that same accessory switch.
In the scenario in the OP...
You have to look at the ratings, if the converter can handle the amp draw of the inverter then there is no problem. Just the efficiency suffers.
Don't use a starting battery for your 12V-supply, they don't recover from deep cycling.
There is another consideration besides weight and that's weight distribution. For example, my 16,500 lb 8x8 (two front axles) has a "07" for its bridge plate number, so it's not exactly going by the weight.

Don't believe that the gauge will be harmed by the circuit being open, it should be designed to indicate an "open" or "shorted" sending unit.
The gauge specifications should specify a certain permitted amount of overload, but don't have any (spec). Do you have access to them?
Lots of good advise, not much to add, just don't turn the filter canisters when tightening and torque to 60-70 ft-lb. If over torqued, the threaded inserts in the casting may come loose.
