Although 37" HMMWV radials all come on 8.25"-wide wheels, I know 9.75"-rims will work OK. But don't ever run them (tubeless) below 30 psi since on a one-piece wheel the only thing keeping the beads seated is air pressure.

Certainly a low-carbon steel. I have welded-shut old bolt holes and then re-drilled, always using common drill bits with no problems.
Channel dimensions are 8" x 3", outside. Material thickness is 0.328" (8.33mm).

The problem I see with a 5th gear missing teeth is that it usually affects both gears, upper- and counter-gear. That means that the whole tranny - not just the MS- had to come out and pulled apart.

I'm not familiar with these caddies but it looks to me that on the pintle mounting surface there are two sets of six pairs of mounting holes placed every one inch, vertically? So the resulting hole pattern would actually be 3-3/8" x 2"?

To mount a wheel with the "large" 10-bolt pattern on a typical 5-ton hub would require some machining of the wheel center and then having a suitable adapter plate (plus hardware), like shown in the image below...
