I had a similar problem 21 years ago. The reason finally was simple: I used decontaminated Diesel fuel (even filtered) which grinded the pump down. I was lucky to get a new one (It was the last awailable pump in Germany).
The worn out pump might supply enough fuel for high idle with no load...

As gimpyrobb said, yes, it can. And this is not a typical Deuce problem. These problems also come up with European made trucks of the 50's and before like on a L5000 Daimler-Benz (a beefed up L4500 from WWII) or on a KHD Jupiter 7 t truck from the German Army. The diaphragm dries out somehow...
I also had some blown glow plugs. And tear of three of them. My final solution was to take the engine out, remove the injectors and with a flexible pliar with four tips I could get the torn of debris out of the prechamber.

For your temp gauges problems I have the following ideas:
First: Did you check the harness for propper contact? Old harneses sometimes have broken cables inside due to their age.
Second: Is the sending unit doing its job? The manuals should have told you which one it is and where it is located...
To me no dought: a M101A2. Even the rails and the staks are of the latest A2 series version, which not neccessaryly mean, they are originally for the year of maufacture of that trailer. Tires are 235/85R16 LR D or E.
