When I replaced the input seal on one of my hubs the shims that were on there got destroyed so I had to do a trial and error to get the correct amount of tightness in the bearings. I would drive it a little and if it got too hot then I would add a shim. Probably not the proper way to do it but...
By hard top I'm assuming you mean the steel slant back? From what I've heard they are heavy, expensive, leak in the rain, and rattle a lot. Soft top is better for a casual cruiser.
I got a 4 prong spindle socket from Advance Auto, don't remember the size and I did have to shave the prongs down a little but it works. For installing the output seal I used a pvc coupler with the cap, can't remember the size of that either but if you take the seal to Home Depot or similar they...

I've replaced the whole water pump without removing the stack. The only real hard part is sticking your arms through the fan to get at the bolts on the front of the fan clutch.
Swapped out the normal parking brake lever for one with a safety lever that you have to press to disengage it. Took a lot longer than expected to install and needed two people, don't know why they didn't just put riv-nuts into the body to make it 100x easier.
I used to do that waste oil thing for my M35A2, was a giant pain in the butt to heat it up to get it thin enough to filter it. I just throw half a quart of 2 cycle oil in per tank every now and again, a gallon is decently cheap at Walmart.
