You could tap a single phase of the three, depending on how the three phase outlet is wired (wye or delta). Check with an electrican.
Tapping one phase only might damage the generator. I would ask on a generator forum.
The saw I saw (no pun intended) in an M105 trailer WAS three phase. I you have access to three-phase power, either line or with a generator, this would be a great buy. I have no experience with the phase convertors.
I would be a little worried about that hose hanging out of the bottom of the oil pan. Less of a worry with highway driving, but a piece of road debris could still knock it off.
I wonder if there is a banjo fitting that would help raise the hose up and out of the way.

Beachwood Canvas might have a canvas top for an M211. There weren't any vinyl top for the M211 from the military as far as I know, though some civilian manufacturer might have produced some.

If you can't find a used pan, then don't try JB Weld or something like that. It will be almost impossible to get it to work with oil in the pan, an even if you drain the oil you will still have a hard time.
I would drain the oil remove the pan and braze it, or take it to a welding shop and...
The OA 331 is an overhead valve engine, not a flathead like the Red Seal.
