That is exactly how the rear leg operates on my M101A2. I just ensure that the bottom leg is fully collapsed before locking it up, that way if it does come unhooked, it'll swing freely without getting caught on anything.
I have a removable bunk for camping, that extra leg allows me to unhook...
I'm not familiar with the CUCV system directly, but on my DD F250 diesel, when I have that clunk with nothing else, I can expect to have two or more Glow Plugs bad.
I would test all of the glow plugs and replace as necessary. Others may suggest the card itself and it would be worth testing it...

I don't know about a spin on heater, or a heater in the filter assembly. But I'm not that familiar with the CUCV, yet... I have not heard of them on civilian trucks either as a stock option, I do know they are available as an add-on though; including tank heaters.

Those trailers look like the one I have in my yard. It's an A3 axle under an A2 body. Best to go with fender extensions (there's a thread about that) or an A3 body. Forget about modifying the axle; that drop axle has a gusset plate that comes almost to the spring pack.
You'll want the hi-lift. The pictures are for an adjustable jack; it appears your lunette is already flipped (so that's good!), but I highly doubt it'll go low enough to catch your pintle and still be able to be rotated into storage position.

That would work if you can get a small plate. I didn't go that route as I was all for ground clearance. Plus if I use the trailer as a dumper, the plate won't get caught on the ground and get all bent up.

I got the small plate (like on motorcycles) and drilled it to accept rivets. Then I placed it on the rear cross member, off center and drilled through it as well. An aluminum rivet on each corner keeps it in place and prevents someone from getting it off easily.

My A2 uses a 13/16 wrench on the lugs (9/16" threading). I personally use an additional 2' of chain for extra length, but you can easily get away with about 18" per side. The nice thing about having extra chain is that you can twist it to get shorter lengths.

If properly set, the hand brakes are more than sufficient to hold the wheels in place when you back up. Ensure that the pins are pulled first!
I used 7/16" diameter pins, 5" long (it's what TSC had). They are the same diameter as the bolts, but are a very tight fit (I bang them into place). You could utilize 3/8" diameter's if you can find the right length (IIRC 4-1/2"), or drill the holes open a little more.
