Here's an idea. Copy what the military did on the 1079/1087 and have none of these issues. No floor hump. No torsion problems. No height problems. Plus it's been real world tested by the largest military in the solar system for 30+ years. 🤷
Replace the u-joints when you have the driveshafts rebuilt. You NEED to have them rebuilt. Chances are good they will tell you that one or all of them are trash and need to be outright replaced. Don't waste new grease on junk. Just pull them and have a competent driveshaft shop go through them...
Very often it's just dirty switch/relay contacts, capacitors that need to reform (radios, etc), and the like. Just USING the vehicle you will often notice that things start working on their own after a little bit of operating time.

I would caution that the CAT water lines have flexible stainless braided sections to account for thermal expansion between the 1200 degree exhaust and the 200 degree engine. Hard piping it like that is asking for a stress fracture near one of those fittings.
